Must have for high gravity Belgian beers
Bought the all gran kit for a high gravity beer. I knew that to keep the yeast from being stressed I needed to go with the best. I used the Wyeast 3787 Trappist High Gravity yeast with a yeast starter. This combination was amazing. I literally bubbled for 7 days hard. I drained the traub from the conical every 3 days and the samples have been great. Just letting it sit a little longer and then I will keg. I am expecting outstanding results!

Still going!
Used the double pack for a westy 12 clone and on day 9, its still showing activity. Looking forward to final product

The Best Yeast for Belgian Beers
I love the flavors of this yeast, and use it for my Dubbels, Triples, and Quads. It is quite true to the classic Belgian flavors. One tip I got from the good people at NB...when using this yeast with the quad, add a few grains of a dried high alcohol tolerance yeast (like Champaign yeast) when bottling. The long time in the secondary with the high alcohol content seems to render the yeast "spent". The few grains are enough to get the bottle carbonation you need. Cheers!
