Wyeast 1968 London ESB
My Favorite go to House Yeast for Ale. I Keg everything so using this highly flocculant yeast works great for me. I do notice that it's a very active yeast and will generate it's own heat rapidly when a Carboy or Demi-Johm is covered. I usually do a 5000 ml starter for a 20 Gal Batch of ESB. I pitch at 65 Degs F, within 24 hours the temp will jump to 72 degs F. if covered at all. Bear in mind room temp is 65 Degs F. I do not get Fruity esters much with this strain. I have used it at least 20 times since 1994. It's very predictable and makes Stellar Clear Ales.
