1st attempt at provolone
Following the provolone recipe on this sight and every thing seems to be going just fine. Been ripening a month, one more to go. Not sure if I can wait that long to taste. My advice: don’t start the process at 6pm if you’re not up for a late night. Mine didn’t really get too a good stretch I quit early. The Lyo-Pro worked as it should, I didn’t.

Kosher Cholov Yisrael starter!
I was super thrilled to find this product, as it is the only product that I know about that is not just Kosher but also Cholov Yisrael. I bought the smallest size available (10 CXU), which should be enough to make cheese from about 25+ gallons of milk. I store the powder in the original packaging, inside a ziplock bag, in the freezer, and use about 1/8 teaspoon per gallon of milk. So far so good!

First time user
I found the Lyo pro TPF to be very easy to work with. More importantly, subtle acidity due to The bacteria culture was noticeable for the first time in my cheese making endeavors. I will most certainly buy it again.
