Delicious light roast!

Went down the rabbit hole of espresso a few months back with a Varia VS6 grinder and Gaggia Classic Pro E24 espresso machine. Started off learning with Lavazza beans from Costco which were OK, but then I finally opened the bag of Colombia Tolima from WLL that I bought with the machine (now about ~10 weeks from roast date printed on bag). The beans looked, felt, and smelled totally different from what I was used to. This was my first time seeing and trying a true light roast, and the high quality of the beans were very apparent. A few tries of dialing in and I had to get very fine with the grind on the Varia VS6 (about 0. 6 on my machine) to get 18g in, 36g out in 28 seconds. This was the best cup of espresso I ever experienced! It tasted very balanced with that fruity acidity combined with mild sweetness and almost zero bitterness. I learned so much from watching WLL videos on Youtube, much appreciation to the whole team there for creating such helpful and entertaining content!
