But, our batch did not have enough carbonation. Could have been brewer error, but we carefully followed instructions.

I used to brew in Florida, now I brew in N.C. My problem in N.C. is too much carbonation, fizzing, etc. I'm an extract brewer and I'm wondering if the issue is the "bottling sugar" I add before bottling. This has been going on for years now - but I am hesitant NOT to add the 5oz of bottling sugar for fear of ruining the entire batch. What's going on here? Thanks
