What a swoony cheese!

I LOVE this cheese, which at its peak ripens is just swoony. I had read about it in the NYTimes and T&A was the only place I could reliably find it - which introduced me to the joys of T&A. I usually make a large Christmas order and justify it by getting gifts that can't be found elsewhere. I get gift cards for my lucky family who live not too far away in Woodstock part-time. This year's Four Fat Fowl arrived almost at peak and my visiting family demolished it all in one day.
