Great for beginners learning how to sharpen knives.
I bought this as I am new to the art of knife sharpening. I recently purchased a $500 Japanese chef knife but wanted to practice on some of my cheaper knives first before being let loose on the SG2 Nigara Anmon Damascus Kiritsuke knife that I bought from a different knife shop.
I was delighted with the quality of the stone, the knife rail and the bamboo/rubber holder for the stone. It was packaged beautifully. I have kept it all in the original postal packaging so that everything can be kept together.
I have practice sharpening my global knives which are a lot cheaper and are a few years old now.
The whetstone works fairly well on my global knives but as my 20 cm chef’s knife was very blunt it wasn’t sufficient enough with the lower 1000 grit to get a burr on the opposite side of the sharpening edge.
Therefore I’ve had to buy a 240 grit stone recommended with global knives in addition to the current site that I have bought through chefs edge.
So my only word of warning is that if you are buying this product to shop in your global knives it probably won’t be sufficient and you’ll need to get a 240 grit stone, I suspect it’s because the global knives use stainless steel which is harder and more difficult to sharpen. Please correct me if I’m wrong.
Overall I am very happy with my purchase and I look forward to using this entry level whetstone to practice to my heart’s content until I feel confident enough to work the same magic on my new pride and joy!
There are some great videos online to learn how to sharpen a knife, all of them use different techniques but I think it’s a matter of finding one that works for you and for your knives.
