A new favorite
I tried this for the first time recently and it's already one of my favorite cuts of meat. So tender and juicy when grilled! It's too expensive to have regularly, but I'll buy it as a special treat when budget allows.

Iberico Secreto
It was amazing. Grilled simply with some spices of Ancient Rome. Wish I had bought twice as much.

The ultimate luxury? I'm hardly joking.
It's an absolute crime that Frankie is selling it for this low of a price. Firstly, due to the fat content, one piece will last me for two to three days and keep me satiated. Secondly, dollar for dollar, the flavor blows everything else I've ever eaten out of the water, both in and out of restaurants. The fat is a mix of buttery and silky with the mineral taste of pastured pork. The meat is simultaneously chewy and tender.
I cooked this to 140 F, held it there for a while, and seared it at 450 F for thirty seconds. Even that was too much cooking, in my opinion. No more than a fifteen-second sear is needed for a cut this thin.
