It's very hard to find hearts of palm that are not canned in the US. These are great! They taste great roasted or grilled.

The photo of my meal does not do the hearts of palm justice. I had a recipe in La Grand Cocina Latina that called for baked rice using canned hearts of palm because the book said it is impossible to find them fresh in the US. Lucky me, Four Star Seafood proved the book wrong. The hearts of palm were delicious and so much tastier than having to used the canned equivalent.

These giant Hawaiian hearts of palm isn’t anything like the ones canned or in brine. It’s crunchy yet tender, subtly earthy and sweet.
