The whole olive flavor

Oh, this is a fine EVOO. Sadeg hits the palate with a demure off the vine olive fruit, then goes to the smooth green bitter grass. A delicate bitter that coats the mouth in pure pleasure. Now I have purchased many o' bottles and brands of organic olive oils and this is one of the top two. The other one came from a California company that has an outrageous price tag. Sciabica's olive oils are not cheap, but they are within the grasp of the more-budgeted gourmand :-) Can this be done as an olio nuovo? If so, I'll be waiting for that, too! Thanks so much. Just so many oils to WANT!!! I finish my homemade organic soups with this. The scent coming from the bowl of the steamy, all-day minestrone that hits the face causes many smiles and "thank yous." I feel like a hero. Also love it as a dip for homemade organic breads and pizza crusts!!! Simply Sadeg and fleur de sel.
