This bottarga from Brooklyn is a favorite of yourselves and Gustiamo in the Bronx. I am not sure I understand why. Almost twice the price of bottarga from Sardinia which (as I remember it from last year) was brighter and more flavorful. I would love to know the source of your enthusiasm. I will happily finish what I have, but doubt I wlould reorder.
