Good but not meeting my requirements

I’m struggling to maintain a low temp (200) with this. I’ve run several tests and am being very careful to control the variables (amount of lit charcoal, air flow, water pan, etc.) but in each test the temperature eventually runs away to 300-310 and is near impossible to bring down once that happens.

The vortex with plate for my wsm 18 is an excellent product. I holds plenty of charcoal for high heats, and the plate has evened out the hot spots. I fully recommend. Made ash clean-up a breeze. Ditched the water pan.
