Lactose is a non-fermentable sugar used to sweeten Brown ales and Stouts. It gives a beer a creamy texture, or "milky" flavor as it is called in some countries.

Fermenting
My 1st beer brew wasnt with liq. culture and had a longer and harder time time to complete ferment. With the added fee of liq starter yeast, it may seem ignorant to charge more for the same thing, minus the water. But the extra costs are well worth it. Its a game changer.
