This beer takes a long time, I'll know in February. But an initial taste when starting the secondary conditioning (while warm and flat) was very much like the real Westvleteren 12. I'm excited to see how this turns out. As they say over at St. Sixtus, you don't drink this beer, you taste it.

Lives up to its name.

After taking the time to make this beer, it lived up to its reputation. I have not tasted the actual Westy 12, but this is a thick, malty, boozy, dark red delight. The time is really the only tough part. Once it got into my 3-tap system, it became very popular. We are considering giving it a permanent spot next to an ever-present NEIPA. I am currently waiting on another batch to ferment out before drinking that last pull out of the first keg.
