Bourbon Barrel Porter All Grain
Excellent product as advertised. The fermentation was a little slow to start but has finished relatively close to expiration. First taste on bottling day was very pleasant and smooth. It’s going to be a keeper!

Worth the wait!
This is the longest brew time I have ever done, 2 weeks primary and 4 weeks secondary fermentation. The secondary had me a bit nervous because it looked that there was 2” of sludge in the bottom of the carboy. When racked over to my fill bucket that was not the case…just some stuff on the glass at the bottom and not the whole bottom. Anyway I used Jack Daniels because I had it in the house but otherwise stuck to the instructions as printed. Just tested the 2nd. bottle and it is rounding out nicely. The color is black as deep space. Chocolate nose and the same chocolate on the back side. The oak is not that noticeable but you do taste the whiskey not in an overwhelming way. I think if I were to do this again I would add some honey but it is great as is.

A really good beer!
I have made the extract version of this several times, and it is excellent. This is my first time making the all-grain version. I am actually riffing on the recipe some, adding some baker's chocolate, lactose, maltodextrine, vanilla, and coffee. I made these same add'ns in my last extract version of this, and it was the best porter I've ever made. Hopefully, the all-grain version will be even better - it is still in the fermenter.
