Description
Pronounced trit-ih-KAY-lee, this grain is a wheat-rye hybrid, but is higher in protein than either wheat or rye. In yeast bread dough triticale flour has better handling properties than rye flour, but does not handle well as a wheat dough.

Triticale Flour
I think the bread I made with half wheat and half triticale flour was far superior to the bread made with just wheat (white) flour. My next loaf will be whole wheat and triticale, for which I have even higher hopes. I will be purchasing a 10-lb. bag of triticale flour from you some time soon.

Perfect ingredient in my light whole wheat - Triticale bread! So glad I found it, as not an easy item to locate!
