The Anasazi bean can be hard to find and it is so great that Purcell Mtn offers an organic choice. These beans cook fairly quickly and add a rich earthy note to soups.

My favorite bean

I read Anasazi are supposed to have a slightly higher protein level and be a little easier to digest. I can’t really attest to that but they are lovely in soups, chilies, a bean and rice dishes. I’ve bought them several times and will continue to do so.
