BBQ Salami

This is a seasoning that will ALWAYS be something we order every year for venison salami. It always gets the comment from people of "That's my absolute favorite".

Decent spice packet

It's a lot of seasoning for a small amount of meat and the smoke flavor in it is a bit fake tasting when I already smoke it to finish the meat. But all in all it's a decent tasting snack stick. I use water and BBQ sauce when thinning out the mixture to get it to go through the stuffer.

Really good flavor

Made these with all beef and they have a really good mild smoky flavor. My kids really liked them. Second batch I added citric acid and red pepper flakes. That really took these to the next level.
