Gesshin 105mm Paring Knife

I am enjoying it

I am really enjoying this knife after switching from a heavier, bolstered, western style paring knife. It's very light and reasonably sharp out of the box. Comfortable to cut on the board and in the air. The edge at the heel is filed just a little bit, so that you won't hurt yourself while cutting in the air. The tip very fine, great for precision work, and mildly dangerous if you're not used to sharp paring knives.

Beats the cheat forschner ones any day on edge retention. Better blade shape for detail work or veggie carving as well!
