I have loved NM Red Chilies a long time. Used to get in farmer’s stand in Santa Fe Farmers Market decades ago. The flavor is cayenne-like but not sharp. Very usable.

Complex and just enough heat!
This has just enough heat to kick things up a bit but not enough to burn your tongue or send your stomach into overdrive. It's also much more complex than cayenne pepper. I used it in a bean soup and it was marvelous! Highly recommended if you want a bit of complex and mysterious heat.
