Solid Griddle Top
I bought this for a 30" GE electric glass cooktop range in my condo. I regularly cook on a 48" Wolf gas range with a built-in 24" griddle at my primary home, so the bar was set pretty high. To be fair, this griddle is not in the same league as the Wolf, but it performs much better than I expected given the uneven heat distribution of multiple electric burners. Unlike the commercial Wolf griddle, which heats very uniformly, this griddle has a learning curve with hot spots and burner settings. That is to be expected and is even explained in the manual. During the seasoning process, I quickly learned that the smaller rear burners on my range get much hotter at a lower setting than the larger burners, which was evident from the faster polymerization of the oil over those areas. The best advice, which the manual repeatedly stresses, is to preheat the griddle on a low setting (no more than 2 out of 10 on my range) and give it adequate time, about 15 minutes, to heat up before increasing the burners. I followed their recommendation and made bacon for the first cook, turning the larger burners up to 6 and keeping the smaller burners at 4. The bacon cooked perfectly, although the pieces directly over the burners, the hot spots, obviously cooked faster. I then made eggs and pancakes around the edges of those hot spots, and they came out great. Most importantly, I didn't have to break out four different pans to make a large breakfast. There is definitely a learning curve and you need to pay attention because things cook quickly, but it made preparing a big breakfast much faster and easier. Overall, I am very pleased with this griddle and would absolutely buy it again.
