I ordered this item on Thursday, but it went out on Friday and was scheduled for Monday delivery, except that was delayed and the package arrived Tuesday. I was very fearful of the result; the contents were cool but not cold, the fish seemed floppy and soft. I refrigerated it and firmed it up; and when I opened the packaging it had a proper texture and no smell. In fact it cooked up beautifully with a good sturgeon texture and taste (broiled with anchovy butter) I'm going to try poaching the next batch, something I didn't dare to do. But I will not request individually sealed portions again--this may very well have delayed the order. Thank you for an excellent product.
