Good flavor and depth
I chose to use the WLP644 yeast for this brew and dropped 2 as Northern called for. Note White Lab recommended 3 for this OG. Two worked fine. The beer has a slight hop bite at first drink. Second drink you pick up on the mango undertone, third drink if you have a discerning pallet you can pick up on the pineapple undertone, but it is very faint. The beer does finish nicely and does not leave any lingering hops bitter. My yeast was hot and heavy for about 3 days, used a blow off. It then went almost dormant, but continue to slow act as expected of that strain. I moved this to secondary after 1 week, left in secondary for 2 weeks, bottled and bottle aged with fizz drops for 4 weeks. It turned out well and all that have tried it liked it.

Xcellent outcome
This is a very easy brew but long payoff..,and completely worth it. The brew was short but a good time...love to brew outside, drink my previous concoctions, and smoke a stogie or two.. Took about an hour...complete piece of cake... Racking was easy since there’s a minimal amount of hop pellets...did it once...the final was really clear of sediment, The final product is what counts, and I gotta tell you, it’s excellent! ABV hovering between 11-12 after three weeks of bottle conditioning, very full bodied, xtremely flavorful, and smooth as silk. Would certainly make again, and would recommend to anyone!
