Armenian Cucumbers
I live in the southwest US, where the growing season for normal cucumbers is shortened by the heat. Armenian cucumbers (actually a variety of musk melon) grow very well in the heat. I use them fresh in salads and pickle them using the same recipes used for regular cucumbers. Armenian cucumbers are firmer than regular cucumbers. They usually need to be cut in thinner or smaller pieces when used fresh, but you don't need to worry about them getting soft when pickling.
