Perfect When Hot Smoking

This is the widest pink butcher paper I've seen, and I used it when hot smoking a couple of rubbed large racks of pork ribs using the 3-2-1 (6 hours) method. It allowed the smoke flavour to permeate the wrapped and moist ribs for 2 hours at 107 degrees C and yet retained the moisture and prevented fat or moisture to leak out, giving me wonderful tasty and tender ribs. It also easily withstood higher temperatures without burning. My son has equally successfully used it for very long and slow hot smoking beef brisket. An excellent aid to my smoking and barbecuing - a revelation! Very happy.
