Shindo Bunka ordered online for pickup, I had worried that it would be out of stock by the next day. The blade was kept without a handle, giving me the choice of shape & material. The staff were friendly, helpful and informative and Balasz fitted my chosen handle without delay. The knife itself is awesome on veg, and serviceable for protein prep or portioning.
