I have never heard of, nor had this cut of beef before. Turned out great. Flavorful and tender. Would recommend, and am going to seek out more.

I know "butcher's cuts" can be some of the best hidden gems so picked up a pack of these to try out. Was not disappointed. Similar tenderness to a filet mignon but way more flavor. Seared all around then oven finished at 375 until they hit 125 in the middle coasting to mid-rare. Perfection.
