Thai Massaman Curry Paste

My wife doesnt eat spicy food generally but fell in love with Massaman Curry when in Khao Lak this year. Mae Jum Massaman is delicious and I cook a slightly watered down version for her with extra Cocunut Milk and one with less cocunut milk for me. Beautiful flavours.

I ordered two mix boxes of pastes last month and I'm working my way through them, The Massaman is truly delightful but I went with a 12 hr slow before and short beef rib cook, It was gorgeous paired with a folded creamed coconut and ginger jasmine rice. Tasted perfect will definitely order again.

Finding true Massaman paste isn’t easy outside of Thailand. My Thai partner used to make his own (David Thompson recipe) but Mae Jum paste is very close to perfection there is no need to lose a whole day in the kitchen making pastes. Believe me this has the depth, the complexity, the perfect balance of flavour including tamarind and roasted spice you don’t usually find. As with every other paste we’ve tried (all of them!) we adore this taste of home, thank you!!
