A Classic Rogan Josh

I have made Rogan Josh from Mrs Balbir Singh's many times since her book was published in 1961. This recipe is a slightly simplified but faithful version of that original. The recipe supplied provides a slightly mild dish; I increased the specified amount of powder from 20g to 30g, doubled the quantity of Garam Masala, and added a little chilli powder, with excellent results.
