The Glestain knives work...period. The scallops in the blades DO keep slices from sticking. I now own 3, and love them. Beautifully thin, great edge, (I know how to sharpen,) and very good "weighting" balance. If I ever got a full-time chef gig, I ...would definitely have these in my kit. Worth the price..
