I just used it for the first time this evening. It is amazing. I made a vinaigrette for fresh greens from the garden. The vinegar was so strong in the flavor of pears that I only used it and olive oil. It was terrific. I can't wait for fresh pear season and I think it would make a terrific sauce for pork.
