Pineapple Shortbread Mini-Cakes

These cookies are a delight. The pineapple flavor is subtile not overpowering. I really enjoyed them.

I wish I had ordered more! I love the slightly chewy and perfectly sweet pineapple filling; it doesn't spill out everywhere when you bite into these heavenly cookies and doesn't melt out of it either which is definitely appreciated when it's so hot outside. The buttery shortbread cookie is such a perfect compliment to the pineapple filling too. I've never had anything like these before & definitely will be back for more!
