USDA Prime Angus Beef - Boneless Prime Rib

Even though it got to temperature about 45 min early (didn't catch it) the meat ended up medium but was very tender and juicy, just not as pink as we like. Tenderness was probably due to salting and seasoning and wrapping in cheese cloth and foil and back in the fridge for 2 1/2 days before cooking. Excellent prime rib. We’ll be back next Christmas!
