I ordered two 3 1/2 to 5 lb brisket flats. They were delivered on time and as expected. I am a competition BBQ Pitmaster and purchased these to determine if Carney Wagyu would be a good fit for my competition contests. I have cooked only one of the flats to date. Unfortunately a flat such as this will not qualify for my needs. While it had segments of fat, it had little marbling. Further there was a streak of fat in the middle of the flat which rules it out for competition purposes. Thick lean prices with a small strip of fat on the bottom is the norm for my purposes. My family did eat and enjoy the meat. I look forward to cooking the other flat to test the results which it presents.

The brisket we cooked on the smoker and it turned out amazing. We will definitely be ordering again
