Decent meat quality but without fat cap
Good quality cut overall but there whole fat cap was trimmed off, would be nicer if they retain the fat layer.

Wonderful Wagyu beef
I ordered 3.5lbs picanha steaks and was sent 3 steaks instead because they were a bit smaller. So in instead we ended with about 8lbs. More than we needed and the leftovers were gratefully enjoyed the next morning for the best steak and eggs breakfast ever.
Really helpful staff. Shipped overnight.
As for cooking - Dry brined for 48 hours and then cooked sous vide for 5 hours (2 hrs at 51c/124f to tenderise and 3 hrs at 54C/130F for medium rare). Quick sear and done.

The beef from Carney Cattle Ranch is like no other I have purchased. I took the time to research how to cook each piece of meat I purchased as I did not want to ruin such good product. Melt in your mouth and the roasts can literally be cut in thick slices and appear as a great medium rare steak. Recommend hightly.
