A staple for me every Etto visit, easy to remove from casing, non-beef and great in a simple pasta sauce

These are very good sausage! When you put them in a pan you don’t have a puddle of fat and a little bit of meat - these are very meaty, and they taste it. The fennel didn’t seem very strong but combined with the Pomodoro Sauce they were very nice.
