Purple Savory Clams

ordered 50 oysters and 5lbs clams. delivered a day late. cold packs completely melted. oysters temped at 75 degrees clams at 78. inedible.

Delicious, very similar in taste to the "palourdes" that I used to forage on the French Atlantic coast when I was kid... plus, they are purple!!! I (non-)cooked them in different ways: raw with just a lime rind piece, braised in white wine with chopped onion and garlic, stuffed with a garlic- and parsley-butter and baked, gratinéed with a white Bordeaux wine sabayon, or in a buckwheat seed risotto cooked in clam broth with small purple clams in and out their shells.
