These are very high quality tomatoes and have purchased them multiple times. We make a very delicious roasted yellow tomato sauce with these for pasta... - 3 lbs yellow tomatoes - 3 shallots, cut into large dice - 6 cloves garlic, cut in half - 2 Tbsp EVOO - Salt and pepper to taste - Sugar to taste - 2 Tbsp fresh basil, torn into bite-size pieces 1. Preheat oven to 425 degrees F (218 degrees C). Line sheet tray with parchment paper. 2. Add tomatoes, shallots, and garlic to large bowl. Toss well with olive oil. Season with salt and pepper to taste.. Spread mixture evenly on sheet tray. 3. Bake in oven until tomatoes are wilted and lightly golden brown in some spots, about 25-30 minutes. 4. Transfer tomato mixture to blender. Puree until smooth or to the coarseness that you prefer. 5. Adjust salt and pepper seasoning as desired. Add a medium pinch of sugar, if desired. 6. Stir in the basil. Pour over your favorite paste. Mix well.
