If you know this is not your typical pork going in then you will be in for an amazing treat. I normally trim the fat off my porkchop. This pork fat is both better tasting and better textured. I'll admit the pork by nature is slightly tougher than typical breeds but only slightly and the flavor is so much better! My wife normally only eats bacon as a topping. SHE finished my bacon. Both chewy and crispy.

Unreal experience. I've been looking for a traceable source of pork for quite some time and have always settled for grocery pork. What Pursuit is doing is exactly what I need. Perfect high quality pork, tons of different cuts, and it's all traceable back to the farm. Love supporting this.
