I ended up putting together my own box because I simply could not decide between all the exciting cuts presented here . . hadn't had most of them, and was excited to try pork that had so much hype. Well, I've had two things out of the large box purchase and I am in disbelief . . . I literally cannot believe how good this stuff is! I wouldn't call myself a chef, but I can cook, and I love the more gourmet cooking and a discovery like this is mind bending. I have about 6 more cuts/choices to go through and I cannot wait. Truly, miles above any other pork I've ever prepared or eaten in my life.

tender and yet has a crisp chew to it, my favorite cut by far!!!
