Always the best from Elias and crew. I used to live in Portland, but am back in the Midwest now. I worked in the industry, and collaborated with Olympia Provisions on the Meat Raffle at Saraveza in the early years. I remember our staff taking a tour of your space and getting educated by Elias on the craft.
