Enjoying this roast

My husband loves Starbarn and Lancaster Signature is my favorite, but we both enjoy Ross Street - it's a medium blend that works well for us when we're sharing a pot of coffee.

Rather than "complex and elegant", my descriptor your words would be "all over the place and muddy". There's too much going on in one cup to pick out any distinct flavor. I wouldn't say it's bad, but it is reminiscent of throwing every spice in the spice rack on your eggs just to try it.
