Mild with a little punch!
A lovely sheep’s milk cheese. The expected tang is there without overwhelming, combined with slight campfire and walnut skin. Pleasantly long lingering on the palate. Nice representation on a board of a slightly drier texture. Will order again.

Flavor is strong, good and interesting, but the cheese is drier than I anticipated. Maybe good for grating? I’ll keep experimenting
