The recipies look great, but before trying them I need to convert every one to gram weight. I have been baking without gluten for 15 years now. Weighing gluten-free flour is so much more consistent than measuring volume, I am surprised any cookbooks are published without the weight of at least the gluten-free flour for each recipe.
