Lemon Poppy Seed Just-Add-Water Muffin Mix

We just made them yesterday. The mix might be better cookie mix. We may need to try again.

Inedible

There is something terribly wrong with this product. Usually with muffins you need to be careful not to overmix the wet and dry ingredients. This has you combine using a mixer for 3 minutes. I followed the instructions but after the maximum baking time the muffins were still underdone. After a few more minutes they were set but very gummy. I tried to eat them but ended up throwing them in the trash, I am surprised since I have been using the bread mixes for years with excellent results,

High hopes but?

These were two dense and chewy for my taste I tried several options to make them fluffier but to no avail.
