The horizontal air flow design makes the dehydrator much easier to use as all trays dehydrate evenly. I do not have to rotate the trays for even drying times. The 24 hour countdown timer allows drying time to be turned off in 30 minute intervals. I set it to dry time of 9 hours for jerky, and 5 hours for drying squash. Set the drying time and forget it. Come back later and it is done. The maximum heating temp of 167 degrees is just right for pasteurizing vinegar for 30 minutes. Remove all trays and insert jars for pasteurizing. Order extra fruit leather trays which I use to catch drips from my meat jerky. Shipping went perfect.
