Light, thin, and well balanced. 240 is perfect length and is already working well as a prep work horse. The spine is quite thin yet stays rigid to the tip, and makes for stable fine knife work. Food has no trouble sliding off the finish as the geometry keeps cutting clean. My only minor complaints…the edge came a bit duller than expected. Had to polish up a good bit. Was also a bit surprised to also see the Nigara hamono insignia was hardly visible compared to the knives photographed. With that said, nothing some sharpening cant fix. i like the knife a lot and love the shop.
