Mushroom Risotto

Loved it! Taste was excellent, prep was easy, presentation was lovely and everyone loved it. I make a lot of my own various types of risotto and so am quite critical of “quick and easy” versions, but this definitely makes the grade. The only change I had to make was to add quite a bit more water to prevent the rice from being crunchy and undercooked. Recipe calls for 1 3/4 cups, but I think I eventually included about 2 1/2 cups. Other than that, everything was perfect and I will definitely purchase again. Just so handy to have in the pantry for when I need it.
