Poorly trimmed briskets
I recently purchased two briskets, about 30 lbs total weight. They had an excessive amount of fat on them. I trimmed them, leaving 1/4 to 1/2 inch on them for flavour and moisture. The trimmed fat weighed over 8.5 pounds. They also cut the nose off the brisket.
This made the briskets feel like a poor value.
The rest of my order, the steaks and ribs were excellent!

Bought this to carve up for corned beef prep to give to the family for St. Patrick's day dinner. Brined the pieces for 8 days and they were slow cooked for 6-9 hrs. it was all perfect and at a great price., Waited till they all did their ST Pat meal for a report and ..lo..all was "great".

Did it in a 44hr sous vide with a reverse blast for crust. Beautiful piece of meat for our Thanksgiving.
