"Peerless" shou
The first steeping I used 7.0 grams in 200 ml @ 98 C - I thought it was a bit weak & needed more tea. The next night I used 10.0 g in the same 200 ml - much nicer flavor. The first steeping after discarding the rinse even had a slight sweet after taste echo. Tonight is my 3rd try - 10.4 g in 160 ml @ 98 C w/ short 10 second steeps - very dark & flavorful - no astringency or bitterness. Highly recommended.
